For 6 persons: 1 kg of freshly caught cod (filleted). 3 Bio Lemons, Sea Salt and Pepper to taste.1 Liter Peanut Oil.
Cut the cod in strips and season with lemon,salt & pepper.
Batter: Mix 2 cups of self rising flour. 1/3 cup of baking soda. 3 dl of your favorite cold lager.Salt & pepper to taste. Mix all so that all the lumps are gone. Should be quite thick. ( if thin more flour, if thick more beer. Let rest for 20 min.
Heat the oil untill 375 F 0r 200 C. Dust the fileets in flour and then dip in batter. Let them slowly drop in to the oil. Be very careful the oil will spatter! Cook for 4-5 min untill golden. 2 pieces at the time. let drain on a plate with paper in a pre-heated oven untill all fish is cooked. Serve with Chefnils Tatare Sauce and Crispy Wedge Potatoes and lots of Lemon and your favorite Hot Sauce. Enjoy.
Note; add any of your favorite spices to the batter for your personal touch. Curry, Paprika, Fresh Herbs etc…..
