Amy’s Crispy Potato Wedges

10 large potatoes (firm) Cut in wedges and drop them in slightly salted boiling water. Cook for 4 min.

Drain and put in a bowl. Let a big blog of butter melt over them and add a generous dash of your best olive oil.

Season with Pressed Fresh Garlic, Paprika, Sea Salt and freshly ground Black Pepper, freshly chopped Thyme and a generous amount of dried Oregano. Mixe and bake in oven at 220 c, turn once untill they have a beautiful deep golden colour and smell incredible 30-45min.Make sure you make enough! These potatoes will disappear quickly.
